Two new Bimber Single Cask Editions

One peated, one unpeated, but both matured in PX sherry casks

 

The London-based Bimber Distillery was founded in 2015 and released the first whisky in September 2019 (we reported). Since then, various small-batch and some single cask editions have been released. Kirsch Import has now presented two single cask bottlings from Bimber especially for the German market: Each of the whiskies was matured in a Pedro Ximénez sherry cask.

One major difference makes a direct comparing tasting very appealing: The whisky for the Bimber Pedro Ximénez Sherry Cask #456 was produced from unpeated malt, while the Bimber Pedro Ximénez Sherry Cask #458 is based on peated malt. Bimber has only been offering peated whisky since spring 2023. Bimber takes the peat from Aberdeenshire to London to smoke the malt in a specially built kiln.

Both Bimber Single Casks for Germany are currently available in limited quantities in the Whisky.de online shop. Both were neither chill-filtered nor coloured and bottled at cask strength.

Bimber Pedro Ximénez Sherry Cask #456 offers 59.2% vol, a total of 280 bottles have been released. Bimber Pedro Ximénez Sherry Cask #458 - Peated resulted in 283 bottles with an alcohol strength of 59.4% vol.
