With four yeasts on the hunt for special taste

 

With the Nc'nean Huntress 2023 Woodland Candy, the young Scottish distillery Nc'nean presents the next bottling of the Huntress series. The limited editions of this series are the result of special whisky experiments, always "on the hunt" for flavours.

Creating the Nc'nean Huntress 2023 Woodland Candy, distillery founder Annabell Thomas once again relied on the use of special yeast cultures. While three yeasts were used for the 2022 Huntress edition, including a special rum yeast, four were used for the 2018 Woodland Candy distillate, including red wine and white wine yeasts for the first time.

The casks used were 35% first fill bourbon casks and 65% STR red wine casks. The Nc'nean Huntress 2023 Woodland Candy was bottled without chill filtration and in natural colour at 48.5% vol. A total of 4,456 bottles are available. The press release describes the whisky's aroma as a complex profile of buttery toffee, wild berries and herbal spice.

The Nc`nean Distillery, located on the Morvern Peninsula, has gone its own way from the very beginning: When it comes to sustainability, hardly any other whisky distillery can hold a candle to it, as it was the first Scottish distillery to achieve the net zero emissions target. It works exclusively with renewable energies, uses 100% organic Scottish barley and fills its Nc'nean Organic Single Malt Whisky in bottles made from recycled glass.
