Details about the Distillery

The Whiskey

The Single Malt Kombu Cask, triple distilled from Irish barley malt, gets a special finish after its maturation in Bourbon casks. The Malt is transferred to Virgin Oak casks that have been charred with Atlantic Kombu Seaweed. This edible seaweed, which is harvested in Ireland, gives the casks a special umami aroma that is released into the Whiskey.

The second bottling from Origin Spirits is the Single Malt Atlantic Wakame Seaweed Cask. After maturing in ex-Bourbon casks like the Kombu Cask, it gets its finish in casks charred with wakame seaweed. Wakame is a type of green seaweed and is harvested sustainably by hand on the Atlantic coast.

Currach Whiskey is named after a traditional Irish boat made of wicker, animal skins and tar, which dates back to the Neolithic period. It was used to collect religious artefacts and also to transport Whiskey to Scotland. Even today it is used for harvesting seaweed in Ireland.

The Gin

The name for the Gin Ornabrak has its origin in the Gaelic word 'orna Braiche' and means 'malted barley'.

The Single Malt Gin is made from 100 per cent Irish malted barley and undergoes four distillation processes in copper pot stills. It is then distilled a fifth time with the five botanicals Douglas fir needles, angelica root, lemon verbena leaves, lemon peel and juniper.

The Production

The barley used is not genetically modified and sourced from contract farmers, mainly in the south-east of Ireland, before being malted in Cork. After malting, the barley is milled in West Cork, mashed, fermented and distilled three times for the Whiskeys and four times for the Gins in copper pot stills.

Origin Spirits attaches great importance to the origin of the products used and applies the 'farm to bottle' principle as far as possible. This is seen as a tribute to Ireland's terroir and distilling heritage.

The History

Patrick Shelley, the owner of Origin Spirits, worked at LVMH (Moët Hennessey - Louis Vuitton) before starting his own company.
