Islay Rum

The Islay Rum has been producing Rum on the Isle of Islay since 2022 as the first and so far only distillery. The distillery is housed in the Old Lemonade Factory in Port Ellen, which has been lovingly renovated.

Details about the Distillery

The Rum

The first bottling of Islay Rum Geal was produced from molasses and is inspired by Rums from Haiti, Jamaica and the French Antilles. It is an unaged white Rum bottled at 45% vol.

The distillery is also experimenting with a spiced Rum, for which special spices are added to the Rum. 

The Production

The Islay Rum is distilled on a special pot and twin retort still. This special still, developed by Head Distiller Ben Inglis, is effectively triple distilled in a single distillation run. To do this, the wash is poured into the still and boiled. The alcohol vapour is then passed into the first retort, where parts of the feints are distilled a second time (similar to the principle of a water pipe) and then into the second retort. Here, there are still remains of the feints as well as the foreshots. Finally, the alcohol vapour is led through a condenser.

The team at Islay Rum is very keen to experiment. For example, different yeasts are tried out or, in addition to production from molasses, a Rum made from sugar cane juice is also tested. The average fermentation time at Islay Rum is about one week. But here, too, they experiment with different times.

The Warehouses

The storage of Islay Rum currently takes place mainly on the mainland, as the warehouse is not yet completely finished. The distillery fills 80 per cent of its Rum into different barrels, 20 per cent is unaged white Rum.

The History

The building in which Islay Rum is produced was originally a lemonade factory built in 1955 in the Art Deco style. After the factory had to close in 2016, the building stood empty for some time until it was bought by The Islay Spirits Company in 2018. After the conversion of the Old Lemonade Factory into a Rum distillery, the production of Islay Rum could start in January 2022.
