DYC

Nicomedes García discovered the traditional methods of Whisky making on his many trips to Scotland and had the idea of setting up a Whisky distillery in Spain. His birthplace, Segovia, a historic town northwest of Madrid, was the ideal place for it. Thus the first Spanish Whisky distillery, DYC (Destilerías y Crianza del Whisky), was founded in 1959.

Details about the Distillery

The Whisky

DYC is the only Spanish brand belonging to Beam Suntory. Two different types of Whisky are produced and double distilled. One is a malt, the DYC Pure Malt and the DYC Single Malt but also blended Whiskies with malted barley and corn.

The DYC Doble Roble Single Malt has a limited edition of 12,000 bottles. The bottles are largely made from recycled materials. With a sherry cask finish, the 12 Años was the first Whisky produced by DYC. The 15 Años won a gold medal at the World Spirits Competition in San Francisco, among other prestigious awards. The Single Malt prevailed against 3,000 competitors from the global spirits market. This version is also limited to 12,000 bottles.

The Production

The distillery is located at over 1,000 metres above sea level on the Eresma River, in the midst of nature at the foot of a national park. The river flows around the distillery and its purity ensures that the water is low in minerals and of very good quality. One of the special features of this distillery is that in addition to the production of Whisky, climate protection is also on the agenda for the preservation of water quality and the reforestation of the surrounding forests. DYC is a pioneer in environmental protection. For example, after production, the water is clarified, cleaned and filtered in the in-house water supply plant, which makes it possible to return 98 percent of the water used to the Eresma River and thus to nature.

The Pot Stills

The DYC distillery has six stills. From the very first batch, double distillation has been carried out here. The first distillation takes place in stills no. 5 and no. 6. The second distillation takes place in stills no. 4 and no. 1. Stills no. 2 and no. 3 are the backup for the second distillation.

Malting

The barley at DYC comes from Castilla y Leon, the most important grain region in Spain, where more than a third of Spain's grain production comes from. Before it goes into the malt mill, the malt made from 100 per cent barley is peated.

The Warehouses

Warehouse number 1 at DYC has a capacity for 10,000 barrels. The distillery has a total of 34 warehouses that can hold up to 200,000 barrels.

The former bourbon barrels, which have a capacity of 190 litres, are not moved, opened or refilled for as long as necessary.

The History

Before Nicomedes García founded the distillery Destilerías y Crianza del Whisky in 1958, paper was produced there until 1680 and later flour in the 19th century. In 1959, production could begin on the estate of the former Molino del Arco in Palazuelos de Eresma in Segovia. The first batch was finally bottled in 1963 and to this day the very first bottle of this bottling can be admired in the visitor centre.

The Visitor Centre

The Visitor Centre is idyllically situated and, despite its antique-looking façade, offers a very modern interior. Many interactive panels with graphics, elaborately designed information panels and a 48-seat video room, whose wood-framed screen fills the room from left to right over an area of 180 degrees, illustrate the development and history of the distillery and the production process in detail. Upstairs, visitors have the opportunity to taste the Whiskies, admire the first bottles of the most important bottlings in glass cabinets or stroll into the property's courtyard, where they will find an old barley filter machine, an antique barrel press and even a malt mill. A virtual tour is offered on the website, which makes it possible to get to know the distillery, the visitor centre and the production process of the DYC Whiskies even before a personal visit.
