Dunnet Bay

In 2014, the distillery was founded and began distilling gin on the first copper still. The distillery is located in the small village of Dunnet in the county of Caithness near Thurso on the northern coast of Scotland.

Details about the Distillery

The Gin

In addition to classic gin, which uses seaweed, lemon shrub, licorice salt, sea buckthorn and rose root along with the traditional botanicals, the distillery also produces an Old Tom Gin, Rock Rose Pink Grapefruit.

The Production

Distillation takes place on a copper still with a capacity of 500 liters. The rising alcohol vapor picks up the aromas of the botanicals in the aroma basket standing next to it. The first potstill was named 'Elizabeth', after Queen Elizabeth. This was soon followed by the second potstill named 'Margaret' after the mother of the production manager. In itself, it was to be only one still to produce a crafted gin, but the success was so great that a second soon followed.

The History

It has long been the desire of Claire and Martin Murray to produce high quality handcrafted Gin. Claire comes from the hotel and tourism industry and her husband Martin is a process engineer with a passion for beer and Gin. Initially, however, this desire remained unfulfilled, as legislation required a still with a capacity of at least 1,800 liters. The two could not afford that. After two years of negotiations, they were able to get in smaller and started with their first potstill 'Elizabeth'. The goal was to sell 10,000 bottles in the first year. Fortunately, this was already exceeded in the 1st quarter with 9,000 bottles and so they were able to expand quickly. Potstill 'Margaret' was added. Today, several Gin varieties and a vodka are produced.

The Visitor Centre
