In Kyoto, you can buy the most exquisite green tea cookies on this planet: quality ingredients, perfectly composed, but utterly expensive. The same applies to Hibiki 21. On the nose, papaya, kiwi and subtle hints of soot mix with sandalwood, dried herbs and incense. Like a roller coaster, the taste catapults you through the flavor wheel: juicy, fruity, spicy and floral, intense and rounded, this blend sparkles like a diamond. Mizunara, icing sugar, and, I kid you not, green tea cookies with white chocolate crown the slowly fading finish. A world-class whisky!

An extravagantly complex nose portrays that Yamazaki must be a "lead malt" in this blend. The bouquet keeps evolving from initially Bourbon-driven aromas to multiple facets of premium oak-aged aromatics. Delicate grain qualities of citrus peels and light floral aromas brighten up the noble, dark "rancio" qualities, reminding of old Armagnacs.
On the palate, the mellow roundness of expertly aged spirits is balanced by the assertive (iso-amyl) alcohol austerity inherent to all of Suntory's. Whereas you hardly notice the abundance of oaky structure neat, water (or ice) pronounce the powdery, earthy tannin structure of expertly crafted barrels without any bitterness.
The retro-olfactory finish is profound and long, akin to the rarest and oldest of elusive spirits - a dying breed. Faint hints of earthiness and peat evolve, but never overpower the floral, almost rye-like perfume of this exquisite blend.
Exceptional, but disproportionately priced compared to the exquisite Yamazaki 18.
