17 Years - 2001 ‘Home is the sailor, home from the sea’
The nose suggests a pipe-smoking sailor on a tarry-timbered boat who comes ashore for coffee, treacle scones and dried figs by a driftwood bonfire. To taste – the sailor coughs on the tarry smoke, so takes a teaspoon of cough mixture, before rewarding himself with dark chocolate with Aleppo pepper and a mouthful of oily nuts (macadamia, almonds, Brazils). Adding water – the sailor returns to his cottage loft with leafy bonfire smoke filtering through the thatch, enjoying PX sherry, liquorice and balsamic glaze on roast sweet potato. After 15 years in ex-bourbon wood we transferred this into a first-fill sherry hogshead.
