Comment: At 55% ABV, I explored Tullamore D.E.W.'s Phoenix with water, targeting 46%.
A very sweet whiskey on the nose, but it is clear that maturation was in Oloroso rather than PX sherry casks. The fruit scents are lighter - not the raisins, figs or dates that one expects from a PX sherry influence.
The sweetness is cut on the palate. Taste and finish carry over a shadow of this whiskey's sweet scents, but lean far more toward earthy flavors on the whole. This balance between nose and taste is welcome, but not enough to vault Phoenix to a higher rating.
