Waterford - 2016 Biodynamic Luna 1st1
For Waterford Biodynamic Luna 1.1 specially cultivated barley was used. The Irish farmer Tervor Harris, John McDonnell and Alan Mooney are operating their farm with esoteric principles, which were created by the Austrian scholar Rudolf Steiner in 1924. Biodynamic is a combination of the words 'bios' (=life) and 'dynamos' (=energy). Therefore each farm should be it's own self-sustaining organism, where the elements of earth, harvest, animals, humans and the 'spirit of the land' should be connected. The Single Malt matured partly in Bourbon casks (35%), fresh White Wine casks from premium French oak (26%) and Vin Doux Naturel Sweet Wine casks (22%).
