Wilderness Trail

The Wilderness Trail distillery is the only one in Kentucky that produces Whiskey with the so-called 'Sweet Mash Process'. In the USA it is almost standard practice to collect the remains of the distillation process, the so-called stillage, and to add them again during fermentation. This sour mash process changes the pH value, the mash becomes more acidic and the yeast can work better. With Sweet Mash fermentation, this step is eliminated and the release of aromas can be better controlled.
