Teeling

The Teeling distillery has been in the Whiskey business since 1782. The founder of the first distillery was Walter Teeling and he set up his small distillery in the Marrowbone Lane in Dublin. The current distillery is just a few hundred meters away from this original location.

Details about the Distillery

The Whiskey

Currently the distillery has three different standard bottles. The small batch is an about six year old Whiskey finished in Rum casks. The single grain is matured in Californian Red Wine casks for about five to six years. The Single Malt is also about six years old and finished in five different Wine and fortified Wine casks.

The Teeling distillery does not believe in colouring or chill-filtration and bottles its Whiskeys at 46% ABV or higher to prevent clouding during the addition of water or ice.

The Production

Teeling used to own the Cooley distillery and distil its grains on the large column still there. The Malt Whisky was produced on two Scottish type pot stills. Now they distil in their new facility in Dublin. The building stands where the old Newmarket stood. The Newmarket square used to trade all the grains and malts from the region in Dublin. This is why most of the distilleries in Dublin used to be around the Newmarket.

The water for the distillation comes from an underground river beneath the distillery.

The Pot stills

The Teeling distillery uses the old traditional Irish pot still triple distillation. The shape of the pot still is very unique as it is also in Irish tradition. This means the pot still is very flat, wide and has a conical shape at the bottom. This shape is so unique as the distillation with Irish Whiskey is mostly carried out on large column stills. The only similar pot stills stand in museums like the one in Midleton. 

The spirit is distilled to a strength of 80% to 90%. Usually you would get a very fine industrial style Whiskey, but due to the flat size it is a bit spicier than the usual spirit.

The Malting

The malt and grain is bought from Irish farmers and makes it a true Irish product. The traditional recipe suggests a 50% malt and 50% grain mixture, which Teeling does for their small batches. The Single Malt is obviously made from 100% malted barley.

Their single grain Whisky is made from 100% unmalted grains and is a mixture of Irish barley grain and corn from the south of France.

Very special about the Teeling distillery is the wet maltmill. This mill grinds the grain while injecting water to the grinding process. This method is much safer that the usual milling process, because there is no dust emerging from the grain.

The Warehouse

The Whiskey matures in a small town called Greenore one hour north of Dublin. Greenore is known for its deep water harbour. The casks stay in an upright positions on pallets in the warehouses. The climate is very maritime with cool summers and mild winters. When you enter a warehouse you will also find a lot of oddly shaped bigger casks. These are the different Wine and Sherry casks that Teeling uses for its finish.

The new distillery opened in 2015 and started distilling, so we can expect the first Whiskey around 2020 from the new distillery.

The Visitor Centre

You can expect a full visitor centre with a small display of pictures, old Teeling bottles, a cafe, a gift shop and a tasting area. The highlight of the building is the tour through the distillery. The distillery is built in a very safe way, so you can actually walk around all the equipment including the malt mill.
