Eden Mill
Eden Mill is Scotland's first combined brewery and distillery, producing Whisky, Gin and Beer. The modern distillery stands on historic ground on the banks of the River Eden in Guardbridge, near St Andrews, where the Haig family produced spirits and beer in the 19th century. After more than 150 years, Eden Mill has brought the art of distilling back to this region. The new Eden Mill Distillery opened in April 2025, followed by the visitor centre in October 2025.

The Whisky
The Eden Mill Distillery is located just a few kilometres west of the famous St Andrews golf course, a place steeped in tradition and history. Eden Mill first launched its New Make Spirit, followed by other young bottlings aged one and two years. In 2018, the first Single Malt Whisky was released, marking the beginning of a new era of Scottish distilling in Fife.
Eden Mill Whiskies are characterised by experimental maturation, local ingredients and sustainable production. They combine modern technology with artisanal precision to produce characterful Lowland Single Malts with a distinctive profile
The Gin
In contrast to the Eden Mill Whisky, which has not yet been bottled for too long, there is a considerable range of Gins from the Lowland distillery. The variety of Gins is divided into different series. The Distiller's Choice Collection consists of limited small batch bottlings that are personally selected by the distillers. These are special and valuable Gins, for example cask matured ones. The Heritage Gin range is inspired by Eden Mill's place of origin, St Andrews. For this, the team chooses ingredients from the distillery's surroundings, such as sea buckthorn in the Original Gin or seaweed, pines and heather in the Golf Gin. The premium Gin range contains experimental Gins with botanicals from all parts of the world. For example, there is the Passion Gin made from passion fruit and coconut, the Rosa Rosa Gin made from wild dog roses (Rosa Canina) and highly fragrant Asian Damask roses (Rosa Damascena). Eden Mill also produces many Gin liqueurs. These flavoured Gins with a mild 20% are available in various styles such as raspberry, vanilla and meringue, mango and pineapple or 'spicy rhubarb crumble'.

The Production
The distillery uses the best local water sources and regionally grown barley. The master distillers experiment with wood maturation and different distillation methods to bring out more distinctive flavours.
The Fermentation
Fermentation at Eden Mill takes almost four days.

The Distillation
The middle cut is hand selected so that the master distillers can make their decisions based on taste and experience.
The Maturation
For maturation, the distillery uses over 95 per cent first fill and virgin oak casks only. Many of these are also in smaller sizes so that improved and faster maturation can be carried out without compromising quality.

The History
The history of Eden Mill is closely linked to the St Andrews region. As early as 1810, the Haig family built the Seggie Distillery on the site of today's distillery in Guardbridge. From 1860 onwards, distilling continued at a different location, while the original buildings were converted into a paper mill, which remained in operation until 2008. Two years later, the University of St Andrews took over the site.
In 2012, Paul Miller and a small team began producing alcohol at the Eden Brewery. The transition to Eden Mill Distillery took place in 2014, when Malt Whisky was distilled there for the first time. This was a significant milestone and marked the return of the art of distilling to Fife.
Since 2022, Eden Mill has been part of the investment company Inverleith LLP. Back in 2018, the company announced a £4 million expansion. Just a few metres from its original location in Fife, the historic buildings of the former paper mill on the Eden Campus of the University of St Andrews were modernised. The aim was to increase the production of Gin, beer and whisky while promoting a sustainable, local economic model.
The Eden Campus also houses a biomass energy centre, part of the university's initiative to become the first carbon-neutral university in the UK. Eden Mill shares this goal and is actively working to achieve CO₂ neutrality in its own production.
The Visitor Centre
The new Eden Mill Visitor Centre has been open since October 2025. Guests can enjoy guided tours, tastings and interactive experiences, from the Eden Mill Single Malt Tour to Gin Cocktail Masterclasses.
