Eden Mill

Eden Mill is the first producer in Scotland which combines a craft brewery and distillery. These produce in St Andrews since 2012 Craft Beer and since 2014 Whisky.

Details about the Distillery

The Whisky

Located just a few miles west of the famous golf course in St Andrews, the distillery also lies on a historic site where the Haig family produced Spirits and Beer in the 19th century.

The distillery first released the New Make. After a year, as well as after two years, further bottlings were released before the first Single Malt Whisky was bottled in April 2018.

The Gin

In contrast to the Eden Mill Whisky, which has not yet been bottled for too long, there is a considerable range of Gins from the Lowland distillery. The variety of Gins is divided into different series. The Distiller's Choice Collection consists of limited small batch bottlings that are personally selected by the distillers. These are special and valuable Gins, for example cask matured ones. The Heritage Gin range is inspired by Eden Mill's place of origin, St Andrews. For this, the team chooses ingredients from the distillery's surroundings, such as sea buckthorn in the Original Gin or seaweed, pines and heather in the Golf Gin. The premium Gin range contains experimental Gins with botanicals from all parts of the world. For example, there is the Passion Gin made from passion fruit and coconut, the Rosa Rosa Gin made from wild dog roses (Rosa Canina) and highly fragrant Asian Damask roses (Rosa Damascena). Eden Mill also produces many Gin liqueurs. These flavoured Gins with a mild 20% are available in various styles such as raspberry, vanilla and meringue, mango and pineapple or 'spicy rhubarb crumble'.

The Production

The distillery uses the best local water sources and regionally grown barley. The master distillers experiment with wood maturation and different distillation methods to bring out more distinctive flavours.

Fermentation at Eden Mill takes almost four days.

The middle cut is hand selected so that the master distillers can make their decisions based on taste and experience.

The Maturation

For maturation, the distillery uses over 95 per cent first fill and virgin oak casks only. Many of these are also in smaller sizes so that improved and faster maturation can be carried out without compromising quality.

History

In 1810, the Haig family built the Seggie Distillery on the site of the present distillery in Guardbridge. From 1860 distilling took place elsewhere and the buildings were converted into a paper mill, which remained until 2008. Two years later it was acquired by St Andrews University. Since 2022, Eden Mill has been owned by the investment company Inverleith LLP.

In 2012, Paul Miller and a team of three began producing alcohol at Eden Brewery. The transition to Eden Mill distillery was completed in 2014 when the first Malt Whisky was distilled on the site.

In 2018, Eden Mill announced a £4 million expansion of the distillery and brewery. Located just yards from the current headquarters in Fife, the historic former paper mill buildings were modernised to increase production of Gin, Beer and Whisky and create more space for further expansion. Eden Mill is thus one of the first businesses at the University of St Andrews' Eden Campus, helping the University to develop a sustainable local economic model. The campus is currently home to a Biomass Energy Centre, an important part of the University's efforts to become the first carbon neutral university in the UK. Eden Mill follows the trend and thrives to be carbon neutral by 2022.

The Visitor Centre

During the construction work, the distillery cannot be visited. However, Eden Mill offers Virtual Distillery Experiences like Private Business Tastings or a Blendworks Gin School. The experiences can be booked under hello@remove-this.edenmill.com.
