Crafty

The Crafty Distillery is, as its name suggests, a small craft distillery in the Scottish Lowlands. At the foot of the Galloway Hills, it produces Billy & Co Single Malt Whisky, Hills and Harbour Gin and 24 Seven Vodka. The craft distillery was built by Graham Taylor together with his late father William.

Details about the Distillery

The Whisky

Billy & Co Single Malt produced at Crafty is named after the founder's late father, William James Taylor. He helped his son Graham set up the distillery before his passing. Billy & Co is intended to be a classic Lowland Scotch Whisky, for which they experiment a lot with different yeast strains. Before the first ready matured Whisky can be bottled, there is a Founders Club: here the 695 members are allowed to have a say in the creation of the Single Malt. Over the time until the Whisky is ready, members receive 17 times five tasters with Whisky that is not yet fully matured. They can taste the Whisky and give online feedback on its development during the maturation process. In this way, the distillery team want to obtain a Whisky that is actively shaped by the community. Founders Club members also have the opportunity to purchase the first casks. 

The Gin

Hills & Harbour Gin is produced at the Crafty distillery. The location of the distillery was decisive for the Gin's name: Situated in the Galloway Hills and at the harbour of the River Cree, the natural flavours of the mountains and the coast also influence the taste of the Gin. Noble fir needles and the brown algae species bladderwrack, which is also usually used as medicine, come directly from the area. The basic alcohol is also distilled in the distillery itself. For this, the locally grown wheat is milled on site and fermented for seven days, which costs more time and money, but is also supposed to provide more flavour. The Hills & Harbour Gin gains further aromas from botanicals such as fruity mango and orange peel, spicy Szechuan peppercorns as well as bay leaves and, of course, juniper. 

The History

The building that houses Crafty Distillery today was built in 2017. The founder's father, Billy, lined it with larch wood from the region inside and out. Today, his son Graham Taylor is responsible for the production of the spirits together with Distillery Manager Craig Rankin.

The Visitor Centre

Attached to the Crafty distillery is a beautiful visitor centre overlooking the Galloway Hills. There is a shop and a cosy 'Tree Bar' with a counter made from the single trunk of a Douglas fir tree.

The distillery team offers guided tours followed by tastings of the Gins and Vodka. There is also the so-called 'Gin Escape Adventure': Here visitors go on a tour through the hills of Galloway with the team and collect botanicals for the Hills & Harbour Gin. Afterwards, people get an insight into the production of the Gin and mix cocktails with the collected herbs and fruits.
