Details about the Distillery

Copper House Distillery is located at the historic Adnams Brewery in Southwold, Suffolk, on the east coast of England. It is one of the most water and energy efficient distilleries in the UK and also generates water and steam for the brewery, which is an integral part of the sustainable production system.

Adnams was the first brewery / distillery in England to produce spirits completely from malting the barley to the finished product. The same local ingredients are used for the spirits - barley, rye, wheat and oats - as for the beers. The rye is even specially grown in fields just a few kilometers from the distillery.

Since 2010, the brewery has also distilled spirits such as Whisky, Gin and Vodka. All spirits are based on locally grown East Anglian malt grain, from which a Wash (basically an unhopped beer) is made with the brewery's own yeast made from two strands of bacteria, which has been in use for over 70 years.

After the grist is milled, it ferments for seven days with Adnams yeast. After this time, all the available sugars that have been extracted have become alcohol. This results in a 'beer' with about 7% alcohol content. Now the distilling can begin.

The Wash is the basis for the production of Whiskies, Vodkas, Gins and also Liqueurs.
