The glossy cinnamon colour of the 1991 Fine & Rare vintage comes courtesy of maturation in an American oak Vasyma puncheon, sherry seasoned in Jerez. Classic aromas of apple, dried fruit and vanilla are followed by ginger, nutmeg and almonds, leading to an intense yet soft palate of sweet spice, raisin and fig. The finish is warming, with notes of fruit, soft yet resinous oak and lingering velvet sweetness.
Filled to cask on 28th March 1991, this rare Macallan, bottled at cask strength of 49.4% alcohol by volume, derives its colour and character solely from 25 years in the cask.
