Dingle Pot Still Gin
The Irish Dingle distillery was founded by the three Beer brewers Oliver Hughes, Liam LaHart and Peter Mosley in 2012. The botanicals in the pot still Gin are capturing the character of the Kerry region. Therefore, regional rowan berries and flowers like fuchsia, bayberry, hawthorn, and heather are used. The botanicals are infused during the maceration. Then the spirit is distilled once more, with the botanicals basket in the upper end of the still. The Dingle Gin is diluted to drinking strength with pure water from the owned 70 meters deep well underneath the distillery.
