Ailsa Bay - 2017 Sweet Smoke 1.2
Ailsa Bay Sweet Smoke is the second bottling of the distillery that was built in 2007 on the site of the Girvan distillery. The production of Ailsa Bay is special due to its unique micro maturation, where the new make is filled in 25 to 100 litres Hudson Bay Bourbon cask before it further matures in fresh, first-fill and second-fill American white oak Bourbon casks for several years. It's also important to know, that the stated ppm refers to the spirit and not to the malted barley like usual.

Mild smoke, balanced with some spice (nutmeg, cloves and pepper). Oak finish. First impression on the nose was spaghetti bolognese ;-)
