New Holyrood Distillery names Jack Mayo master distiller
Other key positions staffed as well
After about 90 years now there will soon be a whisky distillery in Edinburgh again (we reported here). The Holyrood Distillery will be placed on the site of The Engine Shed on St Leonard’s Lane in the center of the Scottish capital. In June the distillery founders David Robertson and Rob and Kelly Carpenter started a £5.5 mio fundraising project to realize the project. Planning application has already been approved by the City of Edinburgh.
No the young company has actually presented the little team that will accompany the construction of the micro distillery from the very beginning: Jack Mayo has been named master distiller. During the last three years he has been working only a few miles away at Glasgow Distillery. Bill Farrer who will take the position of sales- and marketing director can look back on 30 years of experience in the drinks industry. Most recently he was employed as a marketing director at the Edrington Group being responsible for labels as Macallan and Highland Park. Also coming from Edrington Laura Anderson will join the team of Holyrood Distillery as director of finance.
