The company
The Thompson Bros are an independent Scottish bottler from Dornoch in the northern Scottish Highlands. Behind the name are the brothers Simon and Philip Thompson, who initially made a name for themselves in the Scottish whisky scene by founding and managing the whisky bar at Dornoch Castle Hotel. Their passion for whisky soon led to their own bottlings under the family name - the beginning of the Thompson Bros brand.
Step by step, the family hotel and whisky bar developed into an independent bottler with a growing fan base. In 2016, the brothers went one step further: they founded the Dornoch Distillery, a micro-distillery where they have been producing their own whisky and Highland Organic Gin ever since. The Dornoch Distillery was founded through crowdfunding and is located on the grounds of Dornoch Castle Hotel.
Since May 2025, the brothers have been expanding their activities with the construction of the Struie Distillery in Dornoch South - named after the nearby Struie Hill. The new, energy-efficient distillery is set to start production by the end of 2026 and produce up to 250,000 litres of alcohol per year, with the option of 400,000 litres. The focus is on sustainability: innovative, solar-powered heat pump technology will make the Struie Distillery one of the most environmentally friendly distilleries in the world. The project is once again supported by successful crowdfunding of over £2.2 million and will complement the existing operations at Dornoch Distillery and Dornoch Castle Hotel.
The range
The Thompson Bros. range includes a variety of limited edition single cask bottlings from different Scottish distilleries. The selection ranges from fresh, fruity Speyside whiskies to Islay peat bombs full of character. Each bottling is bottled unfiltered and uncoloured to preserve the natural character of the whisky.
The bottles are instantly recognisable thanks to their modern, often humorously designed labels and have achieved cult status among collectors.
In addition to the independent bottlings, the company's own whisky production in the Dornoch Distillery also plays a central role. Small batches of handcrafted whiskies and the multi-award-winning Highland organic gin Thompson Bros Organic Mediterranean Gin are produced here.
