Tax on whisky in Scotland

Can someone give me a brief update on how and when and from what stage or at what stages of whisky production are taxes levied by the authorities in Scotland - what with the spirit safe, dunnage houses and number of years of maturing making this a bit cloudy for someone like me across the globe
