What happens if you age everclear in a new oak cask? 5 liter
Sounds stupid, but I wanna know. |

Depends. How long you plan to let it sit in the cask?
What are you expecting to have at the end of aging? |

As Silverfish says it depends, if it's new oak then it will need to be charred and that's where your first decision is made, whether you want it toasted or alligator charred or somewhere in between, I'd recommend a light char that's a bit heavier than toasting as heavy charring could cause a deleterious effect. Next is where you store it, it should be coolish where there's a good air circulation. Then length of aging, if you do start then test it after 4 to 6 months to see how it's progressing and recheck every month. With such a small cask it will mature very quickly and could also go off as fast so keep an eye [and a nose] on it.
