Default Home Aging Recipes

I recently was given a whiskey barrel as a gift, and I'd love to start aging my own whiskey. I wanted to see if anyone had suggestions on what I should age. Preferably a white whiskey that I can purchase through a retailer. I'd like to begin soon so ordering online is not ideal.
