I dont really have any perfect recommendations for you but it seems like you are on the right path. You can pretty much try any Glenmorangie, there whole line is really nice. I also like Tormore 12yo.
As regards to your father, the blue is very different from the black it is very smooth and goes down a lot easier than the black. What you need to realize is that blue and black are both blended whiskies. If you want to try and put your father in the direction of single malts you could recommend to him Johnnie Walker Green, it is not a single malt it is a blended malt but it is in the right direct to get him to a single malt that isnt johnnie walker since they dont make one.
