There are distilleries that will sell you and age an entire cask for you if you want. You will end up with 2-300 bottles. Between the cask, rent, and bottling, it will be quite expensive. Other than that, your best bet is to buy some single cask whisky as it it's released. The single cask bottlings usually have the distillation and bottling date on the bottle.
