New Scotch Lover, A Few Questions

I've been getting into single-malt scotch for the past half-year (as long as I've been legal), and have already acquired 5 different bottles from different regions because the variations in them are fascinating to me.
I have a few questions though, and was hoping for some help.
What is considered the "right amount" for a glass? I've heard everything from .5 oz to 2 oz. It's probably preference, but I was wondering if there's a "correct" amount.
Also, It seems like the taste of a scotch can vary enormously from night to night. Is this common? should I cleanse the palate before tasting?

Standard Glass
 

The Scotch Whisky Association refer to a standard glass as 25ml. Sorry I don't know how much that is in oz's but it gives you a figure to work with.

I must have double standards because I prefer 50ml :D

Whatever you feel you want to drink. Sometimes I pour a small glass, sometimes I pour a very large glass!
There is no correct amount, unless you are selling it!

A lot of bars in London pour you 50ml drams. At home, I generally just pour the amount I want, but it's often around that 50ml mark.

Which whisky do you have from each region?

Most London bars seem to be serving large measures (50ml), and I find that I pour roughly the same at home... be it a little more or a little less depending on how I'm feeling.

After seeing what 25ml looks like, I pour a little less than that if it's something heavy and smoky like an Islay, and a little more if it's lighter like a Speyside (assuming an Islay can't be light and a Speyside can't be heavy... I don't have too much experience).
I have bought 6 different whiskies so far: Talisker 10, Laphroaig 10, Oban 14, Lagavulin 16, Glenlivet 12, and Cragganmore 12. I bought the Lagavulin because I really liked the Laphroaig and it's peppery smoky flavor, but I think I still like the Laphroaig better since the Lagavulin seems sweeter and not as peppery to me. Same with the Cragganmore, I bought it because I liked the Glenlivet but I actually like the Cragganmore a lot more in this case (I like the spicy/flowery/licorice flavors).
